SANTIAGO DE CUBA, December Customers walking into "La Iris"
pizzeria in downtown Santiago, Cubas second largest city, hoping for a
slice of their favorite pie and a drink stand a good chance of being
dissapointed. More often than not these days, there is a sign on the door that
reads: "Take out, only."
One day recently, employees milled around idly, informing prospective
customers that there was no water to wash the dishes due to problems with the
municipal water supply, so pizza would only be sold to go. With their pizza,
customers could get tea, coffee, hot chocolate, lemonade and macaroni salad. All
these require water in some way to make; there are precious few canned or
bottled drinks available to Cubans. Behind the counter, a woman washed the
floor. She didnt seem to be aware of any problem with the water supply.
